Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
In a large bowl, toss the chicken wings with the cayenne pepper and seasoned salt until evenly coated.
Arrange the wings on the wire rack in a single layer. Bake for 35 minutes, turning halfway through, until crispy and cooked through.
Meanwhile, in a medium saucepan over medium heat, combine hot sauce, molasses, and mesquite smoke flavoring. Stir in chopped onion, green bell pepper, and minced garlic.
Simmer the sauce for 8-10 minutes until vegetables soften and sauce thickens slightly. Remove from heat.
When the wings are done, toss them gently in the warm smoky hot sauce mixture until fully coated.
Serve hot wings with chilled blue cheese dressing on the side for dipping.
